In the interest of trying something different,  we came up with several variations to using (and enjoying) our cookies without eating them in the most typical fashion. Enjoy the following compilations – and feel free to share your creations on our Facebook page! Enjoy! And Happy New Year to all you cookie lovers!


Snickerdoodle – warm up cookies in microwave or oven and push a Hershey’s Kiss into the center.

Ginger Spice – crush cookies and create a pie crust (follow a recipe similar to a home made graham cracker crust, or check out THIS one).

Lemon Drop – warm up cookies, put a scoop of raspberry sorbet, fresh raspberries, and, if your over 21 years of age, add a drizzle of Chambord. A tried and true recipe, compliments of Ashley at Pacific Cookie Company.

Almond Joe – crush cookies and set aside, soften some ice cream, create small ball shapes with an ice cream scoop or your hands, roll ice cream balls in crushed up cookies and then place in freezer.  Your own home made truffles.  HERE’s another recipe, different variation, equally delicious!

Dr. Midnight – break cookies apart in pieces and place around the walls of a frosted cake.  Creates a cool textured look and an unexpected yummy feature.

Mint Condition – crush cookies and put into brownie batter before baking for a minty twist on your basic brownie recipe.

Peanut Butter w/ Chocolate Chip – crush cookies over a bowl of vanilla ice cream; add chocolate syrup and enjoy!

Chocolate Chip – don’t mess with the best, simply enjoy with a glass of milk or cup of coffee.

Sugar Cookie Fun for the Holidays!

My girls (Lily, 6 and Mila, 3) woke up early on Sunday eagerly awaiting the annual decorating of our Christmas tree that stood freshly cut and bare in the living room.  It was a stormy day so we were happy to have a joyful activity to fill the morning hours. We slowly trimmed the tree, listening to holiday tunes and answering the many questions they had about where each ornament came from as the tree came to life.

The rain kept falling and we were in need of something fun to do. Making cookies is always a popular activity in our house and I had a fun sugar cookie project in the queue. The girls love to roll out dough,  cut it into shapes, and decorate. This Christmas light bulb sugar cookies craft I found on Foxy Fawni’s blog about Christmas crafts was sure to be a hit.

What you need:

  • Sugar cookie ingredients (see recipe below)
  • Vanilla frosting (I had a container of pre-made vanilla buttercream frosting I picked up at the store from The Frosting Queens.)
  • 3 cups M&M Mini chocolate candies (check the M&M website for store locator)
  • Drinking straw
  • Christmas light shaped cookie cutter (I ordered one from Etsy but also call your local bakery supply store)
  • Rolling pin(s)
  • Optional- 4 strands of licorice laces

We used the Holiday Sugar Cookie recipe from one of my favorite baking cookbooks- Flour by Joanne Chang. Joanne Chang is the owner of Flour bakeries in Boston, Ma. She has her B.A. in Applied Mathematics and Economics from Harvard and soon after graduating realized that she loved baking cookies more than anything else. Her recipes are delightful (never too sweet) and I have never been able to mess any of them up!

 

 

 

Holiday Sugar Cookies by Joanne Chang

  • 1 cup (2 sticks) unsalted butter at room temperature
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 3 cups unbleached all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt

Cream sugar and butter for 5 min until light and fluffy (I used a hand-mixer but a wooden spoon will work, although it may take longer to cream). Beat in eggs and vanilla on medium speed for 2-3 min until combined.

In medium bowl, stir together flour, baking powder & salt until well mixed. On low speed, slowly blend the flour mixture into the butter-sugar mixture and them mix just until the flour mixture is totally incorporated and the dough evenly mixed. Refrigerate the dough for 1 hour until firm enough to roll out.

Preheat oven to 350 degrees

(Great time to get the kids working!) separate different colors of mini M&M’s into 6  different bowls. 

Put on your aprons- it is about to get messy! Lightly flour your work surface, place dough on the surface and flour the dough and rolling pin. Roll out the dough to 1/4 inch thick and make your Christmas Light Bulb cut outs. Transfer to a baking sheet and using a drinking straw press a hole at the top of each cookie.

Bake 12-15 min until cookies are golden brown on the edges and pale in the center. Cool completely. Decorate by first adding a smooth layer of vanilla butter cream frosting and then add the M&M minis one color per cookie (see the above photo). Loop a ribbon or licorice rope through the holes.

Tips

1. I like to make a double batch of cookie dough and freeze the second portion for rainy days.

2. Make sure your light bulb dough cutouts are 1/4 inch or thinner. When we made them too thick they spread too much in the oven and looked like blobs.

Thanksgiving is quickly approaching, and I’ve been getting ready by taking down my spooky Halloween decorations and replacing it with fall decor. My favorite part about this holiday is all the baking and food prep – well, besides spending the day with family/friends, eating an abundance of delicious food, and watching football of course! ;) But on the baking note, I decided to test a new recipe: Peanut Butter Bacon and Chocolate Chip Cookies! The inspiration came to me after I posted an October 9th Facebook comment linking to the recipe, to which I received very mixed reviews. Thinking that the recipe needed a chance to show itself, I took to the kitchen with measuring spoons in hand.

The only thing I’d do differently? Bake the cookies for less time – my cookies were a bit crunchy (although delicious with a cup of coffee!).

Oh, and a local shout-out to El Salchichero, a Santa Cruz community butcher with sustainable practices and delicious meats. I bought your bacon – my husband and I LOVE your bacon! Although this recipe calls for an applewood smoked bacon, I just went with whatever El Salchichero had. I also may have bought a bit extra for dinner that night J

Peanut Butter-Bacon Cookies

Makes 3 dozen

1/2 cup margarine, softened

1/2 cup sugar

1/2 cup brown sugar

1/3 cup peanut butter (chunky or creamy)

1 egg

1/2 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1 teaspoon baking soda

1/8 teaspoon salt

1 pound apple wood smoked bacon, fried and roughly chopped

1/2 cup milk chocolate chips

1/2 cup peanut butter chips

 

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream margarine and sugars together, using an electric mixer set on medium speed. Beat in peanut butter, egg and vanilla until well combined. Sift flour, baking soda and salt together and slowly beat into peanut butter mixture until a soft dough forms. Stir chopped bacon, chocolate and peanut butter chips into dough by hand until well incorporated.
  3. Drop cookie dough by tablespoons onto greased cookie sheet. Bake for 12 to 16 minutes.

 

Per cookie: 170 calories (61 percent from fat), 12 grams total fat (4 grams saturated), 17 milligrams cholesterol, 11 grams carbohydrates, 6 grams protein, 295 milligrams sodium, trace dietary fiber.

How Do You Like Your Oatmeal Cookies?

This blog entry was inspired by an article I came across on OneForTheTable.com written by Marilyn Naron.  Naron’s comment and main point was that “there are as many oatmeal secrets in America as there are splattered recipe cards.” And this got me wondering: what sort of  incredibly tasty oatmeal cookie secrets do my family and friends have? I have always enjoyed my oatmeal cookie with raisins and lots of cinnamon and nutmeg, but I have decided to take a personal poll (the results of which are still pending) to see what flavor combinations I might be missing out on!

In the meantime, here are Naron’s 25 ways to make a better oatmeal cookie.

  1. Add extra cinnamon and chocolate chunks
  2. Add dried cherries, crystallized ginger and a dash of powdered ginger
  3. Add chopped dried pineapple and toasted coconut
  4. Add finely chopped granny smith apple
  5. Add dried currants plumped in orange juice, and the zest of one orange
  6. Add chopped toffee bits and toasted almond slices
  7. Add dried wild blueberries and nutmeg
  8. Add chocolate chips and pecan halves
  9. Add white chocolate chips and toasted walnuts
  10. Add a few handfuls of any Trader Joe’s trail mix
  11. Add a tablespoon of powdered espresso and cocoa nibs
  12. Add chopped dried pears and white chocolate chunks
  13. Add chopped candied orange peel
  14. Add dried cranberries and pumpkin pie spice
  15. Add chocolate chunks and salted peanuts
  16. Add grated raw carrot and toasted walnuts
  17. Add chopped dates and toasted coconut
  18. Add chocolate chips, chopped walnuts & mini-marshmallows
  19. Add about a cup of Rice Krispies cereal
  20. Chocolate-Dipped: Bake jumbo cookies and allow to cool. Cut cookies into quarters and dip each pointed end in melted semi-sweet chocolate. Allow chocolate to set, and serve.
  21. Oatmeal Black and Whites: bake large oatmeal cookies and cool. Make chocolate and white icings (try these icing recipes). Frost one half of each cookie with dark icing, and the other half with white.
  22. Oatmeal Faux Macarons: make small, puffy oatmeal cookies and sandwich two with chocolate ganache. Allow ganache to set, and serve.
  23. Orange-Glazed Oatmeal Cookies: make a light glaze by mixing 1 cup powdered sugar, 1 1/2 tablespoons orange juice, and pinch of grated orange zest. Drizzle over cookies and allow to dry.
  24. Oatmeal Cookie Dip: Bake mini oatmeal cookies, and make chocolate yogurt dip: whisk one cup vanilla yogurt with one tablespoon of cocoa powder and one tablespoon brown sugar. Chill for an hour, then serve with cookies and fresh strawberries.
  25. Brandied Cherry Oatmeal Ice Cream Sandwiches: soak dried cherries in brandy and drain. Add to oatmeal dough; bake jumbo cookies and cool. Sandwich with good-quality cherry ice cream and freeze.
